What is Beet

Beet (scientific name: Beta vulgaris ssp. vulgaris var. vulgaris) is a hardy flowering biennial in the family Amaranthaceae native to the Mediterranean coast. In the summer of my second year, it has small flowers that look like yellow rape flowers. The enlarged root is eaten by steaming, baking, pickling, borscht and other stewed dishes. It has a red pigment called betacyanin, and when cut, it produces a large amount of dark red liquid, which is why it is also called kaen-sai (flame vegetable) in its Japanese name. A similar vegetable is {{sugar beet}}, which is white in color for sugar.
