Parasenecio delphiniifolius

Parasenecio delphiniifolius (Parasenecio delphiniifolius) is a perennial plant native to Japan and belongs to the family Asteraceae. It grows wild in damp mountains and fields. In the spring, the stems are extended with conical leaves at the tips, and as they grow, they become palm-shaped, resembling autumn leaves. In summer and autumn, the conical inflorescence extends from the tip of the stem to produce five white tubular head flowers wrapped in tubular bracts. The crown of the flower has five lobes at the tip and the flower column has two lobes at the tip. The name of the flower comes from the fact that the foliage-like leaves look like hats when they are closed. The leaves are used as a wild vegetable in spring and have a unique aroma, bittersweetness, and crunchiness, and are as popular as taranome (sprout of taranoki). Cooking methods include boiled vegetables, tempura, fried in oil, boiled vegetables, and miso soup.
