What is Echizenshirakki
Leaf Burdock or Echizen shirakk Burdock (scientific name: Arctium lappa) is an overgrowth of the Asteraceae family of burdocks that was brought to Japan from Siberia in the Heian period. It is a leafy burdock with edible roots, leaves, and stems, and is considered a traditional vegetable of Sakai City, Fukui Prefecture. It is a short-rooted species with short roots and unusual white stems. The stems are pickled in salt, the leaves are used in tempura, soaked or tsukudani, and the small roots are edible as burdock. The stems grow in the spring after the second year from sowing and produce several white tubular flowers in the summer by forming a head flower at the top of the stem or in the leaf axils. The involucral bracts are globular and the involucral pieces are hooked at the end and attach to animals.
