Chamamé

Chamame (scientific name: Glycine max 'chamame') is an annual plant of the leguminous soybean genus and its seed " Soybean (scientific name: Glycine max) , bred in Niigata. Yamagata has a variety called “Dadachamame (scientific name: Glycine max 'dadachamame'). Immature beans of soybeans are called edamame (scientific name: G. max), but 2 to 3 immature beans in the capsule are also edible for chamame (G. max 'chamame'). The difference between the two is that the light skin color that covers the beans is green for edamame (G. max) and brown for Chamae(G. max 'chamame'). Chamame (G. max 'chamame') are harvested when the cocoon is flat, and edamame (G. max) are harvested after being rounded. Chamame (G. max 'chamame') are harvested later. Chamame (G. max 'chamame') have a high scent when boiled, and the beans themselves have a flavor. To that extent, chamame (G. max 'chamame') are more expensive than Edamame (G. max).
