What is Nori

Nori or Laver (scientific name: Neopyropia yezoensis←synonym:Porphyra tenera) is a red algae seaweed native to the coast of Japan. It is also used as a generic name for edible algae. It is also known as ita nori, nori, or asakusa nori. It is also mentioned in the Manyoshu, and was called Murasaki-nori (purple laver), Amanori (sweet laver), and Jinsen-nai (divine herb). It has been cultivated since the Edo period (1603-1868), and in modern times, it is cultivated in Hokkaido, Honshu, Shikoku, and Kyushu. In the past, Asakusa nori (Asakusa nori species of the genus Amanori) was the most common type of laver, but nowadays, Susabinori (Arabi nori, same genus and species: Amanori genus Susabinori) is the main type of laver cultivated and shipped. Natural nori is called iwa nori. Ita Nori is a dried product (zengata) made by thinly straining cultured Uppuru Nori or Susabi Nori to a length of 21 cm and a width of 19 cm, and is blackish with a blue-green tinge. A set of 10 sheets of whole dried laver is called "1cho" and is the minimum distribution unit for wholesalers. It is used as a side dish for rice, nigiri, makizushi, gunkanmaki, coloring chirashi, etc.
