What is Trevise
Trevis (scientific name: Cichorium intybus var. Foliosum) is native to northern Italy and is a subspecies of "Cichori" which is the cold-resistant perennial of the family Asteraceae. In the summer, flowers like chrysanthemum of light blue purple blooms. Leaves are rounded, reddish purple and stems are white. Similar to cabbage or lettuce it is a member of Chicory. It is a leafy vegetable that has recently entered Japan and is also called red chicory. It is similar to red cabbage, however it is softer than cabbage, leafy is thick and bitter. It is used for coloring and bitter taste of salad etc., and it gets even bitter when heated. The name comes from the city "Treviso" in northern Italy which is the production area.
