What is Fennel
Fennel (scientific name: Foeniculum vulgare) is a perennial herb in the family Apiaceae, genus Foeniculum, native to the Mediterranean coastal region.
It is also known by other names such as "Uikyō" (Japanese: 茴香), "fenouil" (French), and "Florence fennel".
The plant grows to a height of 100 to 200 cm.
Its leaves are green and are finely divided into thread-like segments, forming a pinnate compound leaf.
From June to August, it produces several radiating branches from the tip of a yellow-green flower stalk, each bearing clusters of small yellow flowers.
After flowering, it develops small, oblong, dry fruits.
The leaf stalks and seeds are used as spices, for example in curry powder, while the leaves are commonly used to season fish dishes.
The leaf bases are consumed raw as a vegetable known as "finocchio", often in salads.
The seeds have been traditionally used in Europe, China, and India in sweets, pickles, and traditional medicine (e.g., to aid digestion and relieve cold symptoms).
